Fish Diet: Salmon Cakes with Brown Rice 09/21/2011
I was away from blogging for more than a week and focused on some health issues that my family doctor stressed out to me. He wants me to go less on my pork and beef intake and continue to entertain a variety of ways how fish can be enjoyed. The result of this food assignment (or doctor advice ha-ha!) is a treat of Salmon Cakes -- chopped pink salmon baked or fried with bread crumbs. Each cake is a mixture of egg whites, minced onion, and other stuff which can be potatoes, dill weed or even lemon juice. I got my serving of these savory cakes at Pancake House which is starting to be my meal marina. The serving is made healthier with brown rice which can be sticky to the palate if you're not used to it. The rice even had raisins which gave each bite of the Salmon Cake a twist. The bursts of the raisins' plump sweetness and the cake's crunchiness were a good match. Commentsso pancake house have upgraded
